$21.00Wolichu Wachu washing station is a new player on the market in Ethiopia. Grown in Guji, a sub-region of world famous Sidamo, this washing station is making waves in the area in only its second year of production.
Once harvested, the cherries were depulped and fermented underwater for 48-72 hours before being washed and soaked for an additional 10 hours. To complete the process, the coffee was spread on African raised beds to dry for 9-12 days. As a ‘Special Prep’ lot, defective beans were hand removed by trained sorters throughout the drying process.
Any coffee coming from Sidamo, or one of its increasingly distinctive sub-regions comes with lofty expectations. This year Wolichu Wachu has well and truly risen to the challenge.
